I found it interesting the other day to see a sign at my local Whole Foods that declared “Collards are the New Kale.” This is a new advertising campaign as part of Whole Foods’ Health Starts Here marketing initiative that includes demonstrations at stores showing consumers all the new and exciting ways they can get more collards in to their diets.
I have to think that Mr. Mackey is back at it again, hoping he’ll hit another home run with collards and anoint them with the rock star status that kale currently enjoys. I for one am pulling for him. Collards are delicious and definitely deserve a higher status in American cuisine and should no longer be only relegated to soul food or southern cuisine. If you haven’t tried them yet, you need to. I think they have more flavor than kale with a peppery, almost spicy hint to them.
